Chicken Pie 5

Ingredients 1

  • 3 Tablespoons butter
  • 1 small onion (chopped 1/4 inch)
  • 1 stalk celery (chopped 1/4 inch)
  • 1 carrot (chopped 1/4 inch)
  • 1 teaspoon salt
  • 1 sprig thyme
  • 1 pinch turmeric
  • 1 sage leaf
  • fresh parsley
  • 1 pinch cayenne pepper
  • 1/4 teaspoon pepper

Ingredients 2

  • 3 Tablespoons Flour
  • 1 cup chicken broth
  • 2/3 cup milk

Ingredients 3

  • 2 cups diced cooked chicken
  • 1 cup fresh or frozen peas
  • 2 large Potatoes (diced 1/2 inch precooked 10 minutes)

Directions

Melt the butter from ingredients 1 in a large frying pan

Add the rest of ingredients 1 and sweat the vegetables

Add flour from ingredients 2 and make a Roux

Remove from the heat

Add chicken broth and milk (ingredients 2)

Return to heat and bring to a boil for 1 minute

Remove from heat

Add ingredients 3

Let cool

Place in pastry lined 9 inch deep dish pie plate

Cover with pastry

Bake at 425° F. for 15 minutes

Reduce heat to 350° F. for 30-35 minutes
